What are the best pie recipes? For me, the best pies are pies that are full of flavor with a flaky crust. I admit my weakness in pie making is always the crust.

I can never get a nice flaky crust if I make a homemade pie crust. I have found the frozen pie crust works great. Using a frozen pie crust does make for the best pie recipes.

One of my favorite pies to make is a lemon pie recipe. Lemon pie can be made in different ways from the classic meringue pie to a custard pie recipe.

One thing I like in a lemon pie recipe is a strong lemon flavor. I love lemon. I think a strong lemon flavor is a great compliment to the sweetness of the lemon meringue pie.

What is a meringue pie? Meringue is a mixture of stiffly beaten egg whites and sugar. Then you put it on top of the pie and lightly bake it till nice and golden. A meringue pie is defined by that sugary confection on top of the pie.

A meringue pie is not limited to a lemon pie, you can have chocolate meringue pie to coconut meringue pie. Meringue is best on some type of custard or gel-like pie recipe.

Easy lemon meringue pie

When I first wanted to make lemon meringue pie, I was afraid to make the lemon filling. It was cooking the eggs to make the homemade pie filling that scared me.

After getting overcooking the eggs into the lemon filling that making an easy lemon meringue pie was easy. The secret to making the pie easy is taking your time.

The end result was a lemon meringue pie that was not only very lemony but one that was declared the best lemon pie recipe!

Lemon meringue pie is one of the best pie recipes. This lemon pie recipe is full of lemon flavor and is easy to make.

Ingredients

  • Filling:
  • 1 1/4 cups sugar
  • 1/3 cup cornstarch
  • 1 cup cold water
  • 3 egg yolks
  • 1 cup lemon juice
  • 3 tablespoons butter
  • 1 pastry shell (baked, 9 inches)
  • MERINGUE:
  • 1 tablespoon cornstarch
  • 1/3 cup cold water
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • Dash salt
  • 6 tablespoons sugar

Instructions

  1. In a saucepan, combine sugar and cornstarch., the stir in water until smooth.
  2. Cook and stir over medium heat until thickened and bubbly.
  3. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir in a small amount of hot filling into egg yolks. Return the egg yolk mixture to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes
  4. Add lemon juice and butter; stir until butter is melted and mixture is blended. Cook and stir for 2 minutes.
  5. Take off the heat and pour the hot filling into the pastry shell.
  6. Set the pie in the fridge while you make the meringue.

Meringue

  1. In a saucepan, combine cornstarch, vanilla, and water until smooth.
  2. Cook and stir over medium-low heat until mixture is thickened, about 2 minutes. Remove from the heat.
  3. In a bowl, beat egg whites, until foamy.
  4. Gradually beat in sugar, 1 tablespoon at a time, on medium speed until soft peaks form and sugar is dissolved.
  5. Gradually beat in cornstarch mixture, 1 tablespoon at a time, on high until stiff peaks form.
  6. Take the pie out the fridge and spread evenly over the filling, sealing edges to crust.
  7. Bake at 325° for 18-20 minutes or until the meringue is golden.
  8. Cool on a wire rack for 1 hour, then place the pie in the Refrigerator for at least 3 hours before serving.
  9. Slice it up and ENJOY!
